Can I prepare meatballs ahead of time?

Absolutely! Store them covered for up to one day in the refrigerator. Just make sure to spread them out on baking paper, so that they don't touch each other. A little prep ahead of time can save you a lot of grief later. You can also freeze them like that. Then, once they're frozen solid, transfer the meat balls into a freezer bag and store for up to 1-2 months.

What do you put in meatballs so they don't fall apart?

Meat shrinks when cooked, so mince proteins are likely to separate and crumble unless bound together. Breadcrumbs or egg (or both) with simply salt is binding the mince and maintaining the softness of your meatballs while preventing them from falling apart. Some people also soak the breadcrumbs in milk first, which also helps with binding.
