This is a quick, healthy and delicious meal that takes little to no time and leaves you looking like a rockstar.
Bring a small pot of water to a boil and season with salt. Add quinoa and cook for 13 minutes, drain and lay flat on a sheet tray to dry.
Halve avocado, remove seed and scoop out flesh. Drizzle a sheet tray with olive oil and place avocado cut side down.
Broil avocado for 2-3 minutes or as needed until slightly charred. Remove from oven and flip.
Generously sprinkle Flavor Seed Rock Yo’ Taco seasoning on cut side of avocado and return to oven. Broil until slightly browned and crispy.
To serve, add quinoa to a bowl or plate and top with avocado. Finish with a squeeze of lime and another drizzle of olive oil. Enjoy!
