Eggplant Parmesan Bites

Ingredients

  • 1 tbsp The Godfather
  • 2 Baby Japanese Eggplants
  • One 14oz jar Organic Marinara Sauce
  • ½ cup Mozzarella Cheese, shredded
  • ¼ cup Parmesan Cheese, grated
  • ⅓ cup All-Purpose Flour
  • 1 cup Panko Breadcrumbs
  • 2 Whole Eggs
  • 1 sprig Fresh Basil, sliced thin (optional garnish)

Instructions

  1. Preheat oven to 400F. Line a large baking sheet with parchment paper or foil.
  2. Wash and slice eggplant into ¼” rounds. The slices should all be the same thickness.
  3. Set up three small bowls to create a dipping station.
  4. Crack eggs into one bowl and whisk until well combined.
  5. In another bowl, add the flour.
  6. Into the third bowl, mix the breadcrumbs with Flavor Seed’s The Godfather Italian Seasoning.
  7. Dip eggplant rounds into flour, then whisked eggs, then seasoned breadcrumbs. Set coated rounds onto prepared baking sheet.
  8. Repeat this coating process with the remaining eggplant slices.
  9. Bake in oven for about 15-20 minutes, or until golden brown. Remove from oven.
  10. Top each eggplant slice with a teaspoon of marinara sauce. Add a sprinkle of mozzarella and parmesan cheese on each slice.
  11. Return pan to the oven for a few minutes to allow cheese to melt.
  12. Remove from oven. Transfer to a plate. Garnish with basil, if desired, or sprinkle a little more of the Godfather. Serve.
