To season a pot roast, pat the meat dry, rub about 1 tablespoon of a salt, pepper and garlic seasoning per pound over every side, then brown it in a hot pot before any liquid goes in. Season the vegetables lightly on their own, and taste the gravy at the end before adding more salt. Most bland pot roast was seasoned once, at the start, and never again.
That is the short version. Below is when to season, how much to use, which flavors belong in the pot, and how to fix a roast that came out flat.
Season the meat before it hits the pot
A chuck roast is a big, thick piece of beef. Seasoning sprinkled into the broth later only flavors the broth. To get flavor into the meat, it has to go on the meat.
Pat the roast dry with paper towels first. A wet roast steams, and seasoning slides right off it. Then rub the seasoning on every side, including the ends. Press it in with your hand so it stays put.
If you think of it the night before, season the roast, set it on a plate, and leave it uncovered in the refrigerator. The salt has time to work its way in. If you did not think of it the night before, you are in good company. Season it, give it 30 minutes on the counter while you chop the onions, and carry on.
How much seasoning to use
Start with about 1 tablespoon of seasoning per pound of meat. A 3-pound chuck roast takes about 3 tablespoons. That looks like a lot. It is a lot of meat.
That amount is for a blend that already has salt in it. If yours does, do not add extra salt now. Store-bought broth brings salt of its own, and the liquid cooks down for hours. Wait and taste at the end.
What flavors go with pot roast
Pot roast wants savory, not fancy. Salt, black pepper, garlic and onion do most of the work. A few herbs round it out. Here is what we reach for at our house:

- Something with a little more going on. Divine Bovine is our steak rub: sea salt, garlic, cracked black pepper, and whole caraway, coriander, mustard and dill seeds. The seeds toast when you brown the roast and give the gravy a deeper, almost deli-style flavor.
- Herbs for the pot. The Godfather is our Italian seasoning, with basil, oregano, rosemary, thyme and just a hint of sea salt. Stir a teaspoon or two into the broth. It does the job of the little bundle of herbs your grandmother tied with string.

Brown it. This is seasoning too.
Heat a tablespoon or two of oil in a Dutch oven or heavy pot until it shimmers. Set the seasoned roast in and leave it alone for 3 to 4 minutes a side, until it is deep brown. Do the edges too.
That brown crust is where pot roast gets its flavor. The garlic and pepper toast, the meat browns, and the dark bits stuck to the bottom of the pot melt into the gravy once the broth goes in. Skip this step and no amount of seasoning will make up for it.

Season in layers, then taste at the end
- The meat. 1 tablespoon of seasoning per pound, all sides, before browning.
- The vegetables. Toss the carrots, potatoes and onions with a light shake of the same seasoning before they go in. Unseasoned potatoes taste like unseasoned potatoes, even sitting in gravy.
- The liquid. Add broth until it comes about halfway up the roast. Stir in a spoonful of tomato paste and your herbs. Do not salt it yet.
- The finish. Cook covered at 300°F for about 3 to 3½ hours, or 8 hours on low in a slow cooker, until a fork slides in and twists easily. Then taste the gravy. Now is the time for more seasoning, a pinch at a time.
If it still tastes flat after that, it probably does not need more salt. It needs something sharp. A splash of vinegar or Worcestershire sauce wakes the whole pot up.

Should you season a pot roast the night before?
You can, and it helps. Rub the seasoning on, then leave the roast uncovered in the refrigerator overnight. If you are short on time, 30 minutes before browning still beats seasoning the broth and hoping.
Why is my pot roast bland?
Usually one of three reasons: the meat was not seasoned directly, it was not browned, or nobody tasted the gravy at the end. Season the meat, brown it well, then taste and adjust before serving. A splash of vinegar often helps more than extra salt.
Do you season the vegetables in a pot roast?
Yes, lightly. Toss them with a little of the same seasoning before they go in the pot. If you want them to hold their shape, add the potatoes and carrots for the last 1½ to 2 hours of cooking.
